How about a release candidate?  1.0-RC1 would be great.  Call it 1.0.0 
when you're completely happy with the docs.  But RC implies there's 
going to be no more major changes, just fixes and documentation.  Move 
it off of trunk to a stable branch and get the new development work 
going on trunk.
